ALIOT

Chêne Bleu's flagship white is named after Aliot de Montvin, the glassblower who purchased the property in 1427 and changed its name to La Verrière.  Although the estate sits at a southerly latitude, our high altitude and protracted ripening season gently draws out finesse and nuance.  This convinced us we could create a white wine that was not only balanced, but also able to fully capture the complexity of this site.

A blend of Roussanne, Grenache Blanc and Marsanne, Aliot is perfumed and powerful.  Its rich concentration of fruit and dense structure make it an ideal candidate for oak-ageing, which we employ to craft a true vin-de-garde.  Its many layers of flavor, exotic aromatics, and long aging potential have made Aliot a stand-out, award-winning wine since its inaugural vintage.


SERVING SUGGESTIONS

Burgundy-style white, pairs beautifully with salmon or poultry in white sauce, pâté and traditional French cheese.  Its multifaceted flavors also make it a Godsend for hard to pair foods such as artichokes, Jerusalem artichokes, asparagus and truffles.  Serve lightly chilled at 14°C.  Aging potential: 10-15 years.
