Thierry, well known in the restaurant trade, was formerly Maitre D at prestigious London establishments such as Le Gavroche, Aubergine, his own restaurant Angelus, and is currently General Manager at Gordon Ramsay’s restaurant The Savoy Grill.  He gave us crucial insights into the wine needs of restaurants, and the on-trade more generally.
