Mathieu grew up in Paris and originally moved to London to study business and management. But a summer job as a commis sommelier in a French restaurant changed everything, that's when he truly fell in love with wine. But it was no great surprise as winemaking runs in the family - his grandparents were winemakers. Mathieu ended up spending three years in London, learning the trade hands-on, before heading to Bordeaux for more formal wine studies.
He then spent three years working in Michelin-starred restaurants, including Les Sources de Caudalie, which was a real school of excellence. After a brief year in Toulouse, Mathieu finally arrived at Chêne Bleu, where he is able to share his passion for wine with visitors from all over the world, aiming to give them the most memorable Chêne Bleu experience.
